Mediterranean Farro Salad
Boston Salads’ Farro & Artichoke Salad served over a bed of greens, roasted red peppers, and cucumbers; topped with Feta Cheese.
- 1 cup Boston Salads’ Farro & Artichoke Salad
- 1⁄2 chopped tomato
- 1⁄2 roasted red pepper, sliced
- 1⁄2 cup mixed greens
- 1 cucumber, sliced
- 2oz. Feta Cheese
- Place sliced roasted red peppers and cucumber slices on a plate.
- Cut tomatoes and mix with farro salad and place on vegetables.
- Add mixed greens as desired
- Top with Feta Cheese
- Garnish with fresh lemon (optional)
